Dallas Chocolate Conference Raises the Bar on Sweets

The goal of DallasChocolate.org is not only simple – it’s tasty. According to their website, created by chocophile, Sander Wolf, they are, “an educational organization with a mission to educate Dallas about chocolate one bar at a time.”

To this end, DallasChocolate.org’s Chocolate Conference 2010 takes place Saturday, August 14, 2010 at the Addison Conference Center. The event is sponsored by the Adolphus Hotel, and offers a full day of presentations, from 10:00 a.m. until 5:00 p.m.

Attendees will learn about the entire bean to bar process of chocolate, the history of chocolate, how to taste fine chocolate, and more. The day includes a roundtable discussion with experts, so bring your deep, dark chocolatey questions to the table. No tests will be given; although samples students receive throughout the day could create some sticky situations. One thing is for certain, by the end of the conference attendees will know the diference between truffles and bon-bons.

Chocolatiers leading the conference include Madame Cocoa (Adrienne Newman) who graduated from Ecole Chocolate, Art Pollard (found of Amano Artisan Chocolate), and Clay Gordon (author of Chocolate Life) and several others. As a recent transplant to the Dallas – Fort Worth Metroplex, I am pleasantly surprised by the amount of local cheeses, wines and produce this area offers. The Chocolate Conference 2010 bolsters this thriving foodie scene by providing another option for learning about and enjoying local, artisanal foods here in north Texas.
